Smoothies are a great snack or meal replacement filled with nutrients that can easily be made in less than 10 minutes. You really can’t go wrong while making a smoothie. Just grab a blender and keep this simple formula in mind:

Your favorite fruit/Vegetable + Juice or Dairy/Dairy Substitute+ Ice = A tasteful and healthy smoothie.

STRAWBERRY BANANA SMOOTHIE

  • 1 banana

  • 1 1/2 cups frozen strawberries

  • 1 tablespoon chia seeds

  • 3/4 cup unsweetened almond milk

ORANGE CARROT GINGER SMOOTHIE

  • 1 frozen banana, or regular

  • 1 cup fresh orange slices

  • 1/3 cup grated carrot

  • 1 tablespoon hemp hearts

  • 1/2 teaspoon freshly grated ginger

  • 1/2 cup almond milk

  • 1 handful ice cubes (optional)

MANGO PINEAPPLE SMOOTHIE

  • 1 banana

  • 1 cup frozen mango slices

  • 1 cup frozen pineapple slices

  • 1 table spoon chia seeds

  • 1 cup unsweetened almond milk

KALE AVOCADO CUCUMBER SMOOTHIE ( GREEN SMOOTHIE)

  • 1 banana

  • 1/2 cup peeled cucumber

  • 1/2 cup curly kale

  • 1/4 medium sized avocado

  • 1 tablespoon hemp hearts

  • 1 handful ice cubes

LEMON BLUEBERRY SMOOTHIE

  • 1 banana

  • 1 1/2 cup frozen blueberries

  • 1/4 cup old fashioned oats

  • 1/2 teaspoon lemon zest

  • 1/2 tablespoon lemon juice

  • 1 tablespoons sliced almonds (optional)

  • 3/4 cups unsweetened almond milk

This Healthy Baked Pesto Rigatoni is tossed with heirloom tomatoes and a saucy spinach pesto that will knock your socks off!

  • 1 cup Basil

  • 3 large cloves Garlic

  • 2 cups Heirloom tomatoes

  • 1 cup Kale

  • 1 Lemon, juice of

  • 2 cups Spinach

    Condiments

  • 1 Pesto

    Pasta and Grains

  • 1 lb Rigatoni, whole wheat

Baking & Spices

  • 1/2 tsp Salt

    Oils & Vinegars

  • 1/2 cup Olive oil

    Nuts & Seeds

  • 3/4 cup Almonds or pine nuts

    Dairy

  • 1/2 cup Cheese

  • 1/4 cup Parmesan or asiago

    Liquids

  • 1/2 cup Water

 

CHIPOTLE TAHINI BOWL

Healthy and versatile bowls that come together under a generous drizzle of addictingly creamy vegan chipotle tahini sauce.

 
 

Chipotle Tahini

  • 1/2 cup olive oil

  • 1/4 cup water

  • 1/4 cup tahini

  • 1–2 chipotles in adobo sauce

  • 1 small clove of garlic

  • Juice of 1 orange (about 1/4 cup)

  • 1/2 teaspoon salt

Build the Bowls:

  • Roasted sweet potatoes (see notes for my favorite method!)

  • Soft-boiled eggs (see notes for my favorite method!)

  • Kale

  • Quinoa

  • Avocado

  • Anything else you want!

 

BRUSSELS SPROUTS TACOS

Savory sautéed shredded brussels sprouts tucked into charred tortillas with roasted corn, jalapeno, black bean, and cilantro chimichurri. YUM!

 
 

Brussels Sprouts

  • 16 ounces Brussels sprouts, shredded

  • 1 tablespoon taco seasoning

  • Salt and olive oil

Corn

  • 8 ounces frozen corn

  • 1 jalapeño, minced

  • Lime juice, salt, and olive oil

Cilantro Chimmichurri

  • 1 packed cup each cilantro and parsley

  • 1/4 cup each water and olive oil

  • 1/4 cup cashews or sunflower seeds

  • 1 clove garlic

  • 1/2 teaspoon salt

  • Juice of 2 limes

Other Add-Ins

  • Red onion for pickling (see notes!)

  • Tortillas, black beans, corn, avocado, cotija cheese
